English nouns are a bit tricky

Hi, I'm Takehiko. Welcome to my latest article. How are you going? Now, here goes.
In this article, I'm going write about English nouns. I'm learning English, so learning English nouns as well now. I've learnt there're three types of nouns: countable nouns, uncountable nouns, & countable & uncountable nouns.
When I use English nouns, I have to use them according to English grammar. When it comes to countable nouns, I have to add the indefinite article 'a/an', or the definite article 'the' right in front of the nouns, or also have to end the nouns with 's' to show it's plural: for example, 'I have a dog. The dog's given birth to two puppies lately. The two puppies are now growing well.'
Next,when it comes uncountable nouns, I must not use the indefinite article 'a/an ' & end them with 's': for example, 'I saw a piece of sheet. It gave me a lot of information. I love collecting information.'
Using countable nouns & uncountable ones is easy for me. But I'm still not good at distinguishing countable nouns & uncountable ones. In my opinion, this fact proves I still have to continue learning & practicing English to get used to.
Finally, countable & uncountable nouns. I've learnt some English nouns can be used as a countable noun & an uncountable one: such as, 'coffee', 'salad', 'time' & so on. They are extremely tricky for me to understand.
When it comes to Japanese, there're some grammar rules relates to nouns as well. But it seems to me the rules are not used grammatically among Japanese people.
